Devil's food cake
What makes this different than a regular chocolate cake, I hear you ask? This chocolate cake is airy, almost crumbly but remains incredibly rich and luxurious. My recipe uses both cocoa powder and melted chocolate to increase its chocolatey goodness, with hot brewed coffee to also enhance the chocolate flavour. To add moisture and fluffiness, sour cream is used along with whipped butter and dark brown sugar. The icing for this is a wonderful mix of milk and dark chocolate, sour cream and butter and is spread thickly between the layers and all over this cake. I doubt there will be leftovers with this cake.
Spiced Apple and Pecan
Nutmeg, cardamon and cinnamon all add spice to this moist cake made with fresh grated apple and toasted pecans. Layers are filled and covered with spiced brown sugar buttercream topped with toasted nutmeg pecan crumbs.
Lemon and Pistachio
Polenta, lemon zest and chopped pistachios make for an incredibly flavourful, zesty cake. Soaked with a generous drizzle of lemon syrup to make each bite of this moist cake both sweet and tangy.
Like a fine wine this cake gets better with age. Made with whole pureed oranges and almond meal, this cake is incredibly moist, but firms up and improves in flavour a few days after baking. Topped with piped rosettes of citrus Italian meringue buttercream, it is a real winner for any occasion.
A buttery vanilla cake base is studded with burst-in-your-mouth blueberries, along with the tangy zest of lemon. This cake is best served with layers of lemon curd for the filling and finished with a zesty lemon Italian meringue buttercream.
An old time favourite. This incredibly light sponge is split and filled with a layer of strawberry jam, fresh strawberries and fresh whipped cream. Dusted with icing sugar this is the perfect addition to any tea party.
(Due to their nature and texture, these Gourmet Cake flavours are not available with fondant covering or decorations. They present beautifully for all occasions and you will be the star of the party when you bring along one of these cakes!)
